Job Description – Level 1 Skilled Meat Cutter (Pork Cut)

Moose Jaw, Saskatchewan

Reporting to the Cut Floor Supervisor the Level 2 Semi-Skilled Meat Cutter will have excellent knife skills, the ability to follow customer specification and be able to complete the job tasks at line speed without deviation. Good oral communication skills are required to communicate with management and with co-workers. Potential to progress to supervisory positions is possible with experience.

Qualifications:

Level 1 Skilled Meat Cutter (Pork Cut) must be able to qualify as a Level 2 Semi-Skilled Meat Cutter (please see Level 2 Skilled Meat Cutter (Pork Cut) job description) and be able to perform all of the following job at line speed (on the job training is provided):
Lift neck bones
Trim loins and butts
Bone all primal pork cuts to specification
Bone all sub primal pork cuts to specification

Duties and Responsibilities:

Completing job tasks to specification, cutting pork carcasses into primal cuts for further cutting, processing and packaging.
Removing bones from meat and cutting meat into specific cuts for customers
Reviewing equipment and supplies to ensure they are in good working condition
Notify Supervisor of any equipment or supply concerns
Notify Supervisor of any product or specification concerns
Follow all food and health and safety policies and procedures

Working Conditions:

Workweeks are 5 days, Monday to Friday, 6:00AM to 2:30PM overtime may be required
Employees are entitled to two (2) fifteen (15) minute breaks one prior to lunch break and one post lunch break at or mid shift and one (1) thirty (30) minute unpaid lunch break at or near mid shift.
Employees are exposed to controlled cold temperatures, noise, a physically laborious fast paced and repetitive environment

Employment Requirements

One year as a semi-skilled or skilled meat cutting experience
Basic English Skills
Completion of meat cutting certificate (will consider similar experience in place of certificate if 2 years or more).

Jowl removal/dunseth blade
Remove hind leg
Bone picnics
Bone buckeyes
Staged boning
Rib puller
Tenderloin trimmer
Picnic trimmer
Rib bone marker
Scribe saw operator
Rib bone puller
Belly/soft bone remover trimmer
Leg trimmer
Pull tenderloins

Remove skin, excess fat, bruises, bone chips etc. from carcasses, primal cuts, and further processed meat.
Reviewing equipment and supplies to ensure they are in good working condition
Notify Supervisor of any equipment or supply concerns
Notify Supervisor of any product or specification concerns
